Potato starch, a very versatile ingredient, is the starch extracted from the tubers of the potato plant. Potato starch is obtained thanks to the drying and subsequent grinding of the potatoes. The use of this product helps to make cakes and other baked desserts soft.

Features

Potato starch, made exclusively from potato starch, is a very light powder product, similar to corn or corn starch in both uses and properties. It tends to absorb moisture, so it should be stored in a cool and dry place.

Its characteristics make it useful to add as a thickening agent to liquid-based foods, such as soups, velvets, sauces and sweet or savory creams. One of the main uses is to add it to preparations that need to be heated, such as custard or bechamel.

How to use

Potato starch can be useful for making sweets or baked goods, puddings and creams and as a thickener for sauces, fondues and soups.

You can use potato starch in the preparation of any type of dessert. It is particularly suitable for use in the preparation of leavened cakes, to which it gives a delicate taste and extraordinary lightness and softness.

To this end, it is sufficient to replace 1/3 of the flour prescribed by the recipe with potato starch. In the preparation of puddings and hot chocolate it is a valid flour substitute to which it gives a smooth, creamy and velvety texture.

It can also be used as a thickener, for example two tablespoons of potato starch as a thickener for sauces, fondues and soups, just dissolve it in cold water, milk or broth and add it at the end of cooking.
