Nib sugar is a classic component for decoration of bakery or pastry products; it does not contain gluten and it is produced by extruding the nib sugar which is then dried in a special oven.
Features
White sugar in cylindrical and rounded nibs with a typical sweet taste, with consistent characteristics in terms of color, appearance and presentation, intended for surface use on confectionery food products, mainly with a decorative function. The nib is dry, flowing and not agglomerated.
The available nib sizes are:
- Micro sugar nibs 1.8 – 2.0 mm
- Small sugar nibs 2.5 – 2.8 mm
- Medium sugar nibs 3.3 – 3.5 mm
- Large sugar nibs 5.3 – 5.5 mm
Cocoa-coated sugar nibs are available on request.
Uses
Sugar nibs are widely used in all confectionery preparations that require decoration. For the decorations of products such as biscuits and macaroons we recommend the use of micro nib sugar, for products such as brioches we recommend the use of small or medium nib sugar, while for decorating products such as cakes, colomba or panettone we recommend the use of medium or large nib sugar. Gluten-free nib sugar is also free of other allergens.
Storage
Product to be stored in a cool, dry place.
